Foodie Blog!! Apple Cinnamon Pancakes

This morning I made some tasty Apple Cinnamon Pancakes and got rave reviews (okay, so one rave review since I only cook for two) so I thought I'd do my next foodie post. :)

Apple Cinnamon Pancakes (adapted from Allrecipes "Good Old Fashioned Pancakes")

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1/2 to 1 teaspoon cinnamon (depending on how cinnamon-y you like things)
1/2 teaspoon vanilla
1 large apple finely chopped


In a large bowl, sift together the flour, baking powder, cinnamon, salt and sugar. If you have time allow milk and egg to come to room temperature. Mix wet ingredients in a separate bowls; make a well in the center and pour in the milk, vanilla, egg and melted butter; mix until smooth. Stir in apples.



Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

This made about 12 medium pancakes, we ate 4 and then I made the rest and are freezing them for later. They were SUPER tasty! I'll go a little lighter on the cinnamon next time though, I did about 1/2 Tablespoon which was a little too much.
